As a Line Cook, you are responsible for maintaining a high level of service principles in accordance with established Trackside Brand guidelines, including but not limited to ensuring food is top quality and presented in a timely manner. Good communication skills are a must. Your teamwork with other team members is essential to the function of the restaurant. This position requires the ability to work both as a team member and independently. Due to the nature of our business, this position requires availability to work weekends and holidays.


ESSENTIAL FUNCTIONS

  • Preparing menu selections according to order
  • Ensuring that ingredients remain fresh and safe for consumption
  • Prevents cross contamination
  • Must practice safe food and beverage handling and cleanliness at all times
  • Ensure ticket times do not exceed 15-20 minutes
  • Prepare all menu items including appetizers, salads, entrees, daily specials and desserts
  • Be respectful to equipment, avoiding excess use of force on machinery (no slamming, throwing, etc.)
  • Aid in the creation and preparation of daily specials
  • Informs manager when equipment is in need of maintenance, repair, or replacement
  • Prepare meals in accordance with customer’s dietary preferences, if applicable
  • Tracking the components of each meal to ensure that the final dish is completed in a timely manner
  • Operate and participate in a team environment
  • Maintain kitchen work areas, equipment and utensils in clean and orderly condition
  • Preparing kitchen for next shift by ensuring no messes are left behind
  • Must be able to effectively communicate and interact with service team members and management in high stress environment
  • Reporting kitchen accidents or violations of food safety codes and procedures
  • Maintain regular attendance in compliance with Trackside attendance policy
  • Attend all required trainings and meetings
  • Must be available to work evenings, weekends and holidays
  • Maintain high standards of personal appearance by following the Trackside Kitchen Dress Code requirements


REQUIRED KNOWLEDGE, SKILLS AND ABILITIES

  • High School Diploma or equivalent
  • Must be at least 18 years of age
  • 1 year of prior cooking experience preferred
  • Must have knowledge of grill, oven, pantry station and fryer management (Ex. Know what is on your grill at all times and how long items have been cooking to prevent over and undercooking, etc.)
  • Memorization of food menus and recipes
  • Posses or be able to obtain ServSafe Certification for the state of Pennsylvania
  • Strong desire for continuous learning and professional development
  • Compliance with all food safety procedures
  • Exceptional time management skills
  • Relies on experience and judgment to make effective decisions
  • Strong interpersonal and communication skills
  • Exhibits teamwork at all times

  • Responsible and trustworthy PHYSICAL REQUIREMENTS
  • Lifts 10 lbs constantly, up to 25 lbs frequently, up to 50 lbs occasionally.
  • Lifting from the floor to shoulder occasionally and overhead frequently
  • Exposed to cleaning products such as bleach
  • Color and depth perception required for vision. Needs both near and far sight
  • Twists and reaches constantly
  • Grasps objects to move and manipulate constantly
  • Ability to stand for extended periods of time (up to 12 hours)
  • Listen to and comprehend instructions team members over background restaurant and equipment and noise constantly
  • Frequent hand washing required


EQUIPMENT USAGE REQUIREMENTS

  • Oven, grill, fryer, knives, utensils, plates, pots, pans, glass rack, dish machine, garbage cans, food products


WORKING ENVIRONMENT

  • Typical restaurant environment, heat and air conditioning, cold in freezer and walk in refrigerator.
  • May experience sudden changes in temperature while seating guests outside or performing opening procedures


Teamwork is the key to our business’s success. Line Cooks are expected to work with other Line Cooks as a team, communicating with other service members including Bussers, Servers, Bartenders, Hosts and Managers. During service, here are some things you can do to promote that teamwork:

  • Communicate with your team with respect, providing pertinent information you feel affects the Guest’s experience.
  • Communicate with Management if there are any issues that may affect the Guest’s experience.
  • If you see something is not in the correct place, or needs to be done, fix it without having to be asked to do so.
